Ingredients
1 ½ lbs ground chicken
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 can (28 oz) crushed tomatoes
1 can (15 oz) fire-roasted diced tomatoes
1 can (28 oz) tomato sauce
1 cup chicken broth
2 tablespoon tomato paste
1/4 cup chili powder
1 ½ teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon cayenne pepper (optional, for heat)
Salt & black pepper, to taste
1 tablespoon vegetable oil (for browning the chicken)

Instructions
Heat vegetable oil in a skillet on medium high heat.
Add ground chicken and cook for 4 minutes while stirring to break it up into small crumbles.
Add the onion, garlic, salt and pepper. Cook until chicken and onions start to brown.
Transfer the chicken mixture to your slow cooker.
Stir in bell peppers, beans, crushed tomatoes, diced tomatoes, chicken broth, tomato paste, and all spices.
Cook in crock pot on the following settings:
On LOW for 6–7 hours
On HIGH for 3–4 hours
Before serving, stir and adjust seasonings (more salt, chili powder, or cayenne if you like it spicier)
Serve in bowls and top with your favorite chili toppings. Pairs nicely with a crisp, fresh salad & a french baguette.
